Fried mixed fish Sardines, Anchovies, Mackerel



Ingredients (for 4 portions):

  • 1000 Gr. Mixed oily fish, Anchovies, mackerel sardines
  • Flour
  • Plenty of Olive Oil
  • 1 Lemon
  • Sage Leaves
  • Salt
  • White Pepper

Preparation:
Clean the fish and take off the heads, tails and entrails. Wash and dry
Powder in flour and shake off excess.
In a pan heat up oil with some sage leaves, then fry first the bigger fish followed by the smaller fish.
Drain and dry with kitchen paper.
When finished place fish on serving dish, add some lemon wedges and some fresh sage leaves, salt and white pepper.
