Hare In Salmi



Ingredients (for 6 portions):

  • 1 Hare
  • 150 Cl. Red Wine "Ticco" Barbera Del Monferrato D.O.C.
  • Carrot
  • Onion
  • Celery
  • Parsley
  • 2 Cloves
  • Thyme
  • Garlic
  • Juniper
  • Laurel
  • Olive Oil
  • Butter
  • Salt
  • Pepper
  • Flour
  • 1 Tbsp. Tomato sauce
  • 30 Gr. Dried Mushrooms
  • 1 glass of cream

Preparation:
Clean the Hare, cut into pieces and leave it to soak with the wine for 48 hours, in a terracotta pan with the mushrooms and herbs
In the pan slowly fry the butter, oil, chopped onion and two tablespoons of flour, add the hare without its marinade and cook for 15 minutes.
Then add the marinade, salt, pepper and continue cooking.
Once cooked take out the hare and add the cream to the sauce.
Serve hot pouring the sauce over the hare.
