Wild boar stewing meat



Ingredients (for 6 portions):

  • 1200 Gr. Wild boar stewing meat
  • Juniper
  • 3 Carrots
  • 2 Onions
  • Aromatic Herbs
  • 1 glass white wine vinegar
  • 1 Bottle "Lazzarina" Barbera Del Monferrato D.O.C.
  • 300 Gr. Lard
  • 1 Clove of Garlic
  • 1 Orange Rind
  • Olive Oil for the Egg Pasta

Preparation:
The day before marinade the meat with the wine and chopped vegetables, salt, pepper, juniper, aromatic herbs and vinegar.
On the day gently fry the chopped lard, the chopped onions and the garlic in the oil, then add the drained meat and brown.
After this add in the aromatic herbs, the orange rind, the marinade liquid and some hot water so as to cover the meat and leave to cook for 2 hours.

Suggested wines: "LAZZARINA" Barbera del Monferrato D.O.C.
