Genovese Tuna

Ingredients (for 6 portions):

  • 600 Gr. Fresh Tuna
  • 2 Anchovies
  • 30 Gr. Dried Mushrooms
  • Olive Oil
  • 1 Pinch of Pepper
  • 1 glass dry white wine "Cape' "
  • Onion
  • Garlic
  • Parsley
  • 1 Pinch of spices
  • 1 Pinch of salt
  • Flour

Cut the Tuna into cubes of 1 cm.
In a pan gently fry the garlic, onion, parsley and the re-hydrated mushrooms in some oil, making sure all the ingredients are finely chopped.
Dissolve the washed and filleted anchovies in the mixture in the pan; pour in the wine, 1 tablespoon of flour and leave to soak up the juices for 6 – 7 minutes. Add in the tuna with a pinch of pepper, salt and spices.
Cover the pan and leave to cook over a medium heat.
