Madonna della Villa Cortese dell'Alto Monferrato DOC
Production area: the grapes come from an historical vineyard located in the territory of Madonna della Villa, which belongs to Carpeneto. The vineyard, which is about seventy years old, is distinguished by a very low level of vigority which leads a limited consequential burden of production per plant so that thinning treatment can be eliminated.

Grapes: Cortese single varietal, rigorously harvested by hand.

Alcohol content: 13% vol.

Vinification: hand-picked grapes are whole pressed at a very low pressure; the must obtained is then cold extracted and fermented at a specific and controlled temperature.

Refinement: the wine is aged on its fine lees for six months, in steel tanks at a specific and controlled temperature.

Organoleptic
Colour: pale straw yellow, with clear shades of green.
Perfume: very intense, fine and with complexity, with hints of acacia flowers, cedar, rennet and subtle, elegant nuance of bergamot.
Taste: wide and very long, very persistent and soft.

Serving temperature: 10-12°C.

Pairings: Features of this wine permit, in addition to the canonical pairings with appetizers and fish dishes, more creative approaches such as, for example: bresaola rolls with goat's cheese, risotto with radicchio and speck, cannelloni with ricotta and herbs. Also worth trying with classic ravioli of Gavi, where the scent of marjoram may be well supported by the great aromatic complexity of the wine.
