Sant'Evasio Ovada DOCG
Production area: Ovada's village.

Grapes: Dolcetto single varietal.

Alcohol content: 14% vol.

Vinification: de-stemming, maceration is conducted for twelve days approx. with intense pump-overs, punching down the cap at a specific and controlled temperature. After racking and the first decantation, the malolattic fermentation is obtained, a part of which goes into steel tanks and the other into three years old French oak barrels.

Organoleptic
Colour: ruby red with purple veins, intense and compact.
Perfume: fine and elegant, hints of blackberries, blueberries, licorice and vanilla are remarkable.
Taste: full-bodied, soft and very long taste-olfactory persistence.

Serving temperature: 16-18°C.

Pairings: Lasagne alla Bolognese, roasts, rabbit with olives, mature cheese, great with mushroom based dishes.
